Add a client when you do not have their email yet

A client’s email is optional. Somebody who reached you through a referral, a DM or a phone call is a real client before you have an address for them, and a form that insists on one forces you to invent something you will later have to clean up.
What needs an email is anything Stria sends on your behalf: a review link, an invoice, a reminder. Those prompt you for an address at the moment they need one, so nothing fails silently.
